Take off, landing, cruise?

For takeoffs and landings, the ideal is the head wind, because the lift is better. On this basis, we can say, theoretically, that would be good also in cruise flight. But we know that in a flight-route the aircraft will perform best when the flight is being conducted with a tailwind. Why these two theories contradict each other? Could anyone give me a lesson in aerodynamics?
